Fish Chowder

1" strip of salt pork, cut in 1/4" cubes

2 medium onions, chopped

1 bottle of snows clam juice

4 good sized potatoes cubed

1 can of evaporated milk

1 pint of heavy cream

3 pounds of cod fish

1/2 stick of butter

1/2 teaspoon of salt

1/8 teaspoon of black pepper


Render fat out of salt pork, save crackles in a dish.  Sauté onions in pork oil.  Add potatoes, fish, salt, black pepper, and cover with water.  Cook for 10 minutes until potatoes are tender.  Add clam juice, butter, evaporated milk, and cream.  Heat until hot.  Add more salt and black pepper to taste.
